Tartuca is a farm to table neighborhood Italian restaurant. We source almost exclusively from farms in Oregon and Washington, our chef is on a first name basis with most of our farmers, and has worked on some of their farms. Our food is inspired by Italian cooking, and PNW produce. We are vegetable-focused, locally sourced, and make everything in house from scratch. Our chef is well versed in fermentation and whole animal butchery, and has a passion for niche herbs. Our menu changes very frequently, and we cross train our staff to keep everyone engaged and learning, and keep things fun.

We have an open kitchen, which means we get to see the smiles on our guests faces, and answer occasional questions. It also means we must be friendly and work clean.

Our staff is a handful of absolute sweethearts who care a lot about what they do, and all work very well together.

We are looking for a sous chef to help teach and lead our team, work the line or expo on chef's days off, and be a kind and patient leader. No yellers, no throwers. We've all had enough restaurant trauma and we will not repeat the cycle.

We are open 7 days per week, starting at 4pm. Plus brunch on Saturdays and Sundays.

Candidate must be proficient with most, but not necessarily all of the following: pasta cookery, saute, pizza cookery, bread making, pasta making, garde manger, expediting, managing staff, ordering.

The Sous Chef will be working directly with the Head Chef, will be expected to do ordering, prep, train and manage staff, expo, and work the line. You will have creative ability to contribute to the menu, as well as put on specials. You will be filling in for the chef on her days off, and are expected to be a fair leader, good teacher, a good communicator. We will not tolerate demeaning language, or aggressive behavior. We are looking for someone knowledgeable, patient, organized, and good at teaching. We value keeping our staff happy, and holding on to talent.

We offer a 4-day workweek with few exceptions, PTO, 401k, and insurance after 90 days.
