Join us for an incredible opportunity to be a part of our Culinary Team as a Sous Chef! The Sous Chef will support " A Seattle Collection ", a multi-property cluster comprised of Grand Hyatt Seattle, Hyatt at Olive 8 and Hyatt Regency Seattle.


The Sous Chef will manage a specific area of the culinary team and work with the Executive Chefs and/or Executive Sous Chef to create, implement and maintain quality standards. In some instances, the Sous Chef will accomplish their tasks by monitoring the daily functions of the culinary department, including providing support and guidance to the team, ending in a positive guest experience.


Responsibilities include:

• Being a visible leader in the kitchen, setting the example, assisting during busy times.


• Ensure consistency of all dishes, presentations & flavor.


• Act as senior leadership by developing and assuming key management responsibilities. Mentor culinary sous chefs, supervisors and line cooks.


• Assume the role of liaison between all dining room operations and culinary staff.


• Supervise the preparation and cooking of various food items.


• Ensure food preparation meets health codes and standards by conducting regular safety food checks.


• Support senior leadership by developing and assuming basic management responsibilities. Mentor culinary supervisors and line cooks.


• Assume the role of liaison between all departments within the culinary division and all other hotel departments


• Supervise the preparation and cooking of various food items


• Develop and implement creative menu items that adhere to Hyatt brand standards


• Plan, coordinate & implement special events and holiday functions


• Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring


• May manage other key culinary leadership rolls including supervisor and other less senior Sous Chefs


• Lead and coach the team towards achieving exceptional guest service and employee satisfaction results


• Monitor food production, ordering, cost, and quality and consistency on a daily basis


• Ensure proper safety and sanitation of all kitchen facilities and equipment.


• Create or maintain current recipe cards, food descriptions, costings and printing guides


• Write, develop, implement seasonal new menu items


• Development of their staff, supervisors and all cooks


• Create and maintain a relationship with their FOH partners, meeting regularly to improve communication and running of operations.

The salary range for this position is $66,100 to $95,700. Decisions regarding individual salaries will be based on a number of factors, including experience, qualifications, and education.

Qualifications
• In-depth skills and knowledge of all kitchen operations, with a preference of 3-5 years of experience in Italian cuisine and 3-meal restaurants


• Possess strong leadership and communication skills with all teams throughout each hotel in both written and verbal, organization and relationship skills


• Ability to hold individuals accountable using progressive discipline when needed.


• Experience with training, basic financial management and customer service


• Proficient in general computer knowledge


• A true desire to exceed guest expectations in a fast paced customer service environment


• Capable of producing a consistent product in a timely manner


• Strong training and communication skills


• Culinary education and/or on the job training, hotel experience preferred


• Geographic and schedule flexibility preferred with the a bility to work a varying schedule, including days, evenings, weekends, and holidays


• Ability to stand and walk for long periods of time


• Ability to lift/push/pull a moderate amount of weight


• A true desire to satisfy the needs of others
