Colorado Mental Health Institute at Pueblo

About the Nutrition Services department: The mission of the Nutrition Services Department is to provide quality food service and medical nutrition therapy to more than 1500 clients in a mental health care facility and the Colorado Department of Corrections. With over 100 employees, the department strives, within available resources, to provide adequate nutrition to clients based on medical, spiritual, ethnic, cultural, and mental health needs
The Diet Office unit exists to compile, process, and disseminate patient or inmate dietary information to the Nutrition Services' Department, CMHHIP and Pueblo-campus Department of Correction (DOC) facilities; as well as, generates modified diet menus; calculates and generates menu nutritional analysis reports; provides technical assistance to the Nutrition Services' department managers; and tracks other departmental activities.
The incumbent in this position will process diet orders for CMHHIP and three Pueblo-campus DOC facilities; generate modified diet menus; disseminate patient dietary information to the Nutrition Services' Department, and communicate menu changes to DOC; calculate & generate menu nutritional analysis reports; provide administrative assistance to department managers; and may track other departmental activities as assigned. This position fields questions about diets from CMHHIP and DOC staff.

Menu and Production Technician
In accordance with the United States Department of Agriculture (USDA) dietary guidelines, Academy of Nutrition and Dietetics and School Nutrition Program, design menus and food production records for CMHIP and DOC.
Revise modified menus by selecting appropriate recipes and available food items in accordance with a client's prescribed diet.
Complete nutritional analysis for menus using CBORD. Based on the daily census and menus, the technician develops production records (load slips) with accurate amounts and food items to be delivered to each dining room and DOC facility.
CBORD Program (Computerized Food Service Management Software System)
Contribute to the development, implementation, maintenance and integration of CBORD.
Enters accurate data into the software system and updates inventory, compliances, traits, food lists, recipes, menus, etc. as needed. Enters data into CBORD (i.e. diets, recipes, traits).
Develops production and menus by utilizing Food Service Suite (FSS) and Nutrition Services Suite (NSS) in CBORD.
Diet orders and Processing
Utilizes reports from the Behavioral Electronic Health Record (BEHR) to obtain new diet orders as well as follow patient admissions, discharges and unit transfers.
Print tray tickets and snack labels, and verifies compliance with the diet order.
Sort meal tally sheets for various patient units and updates a computerized modified diet census.
Processes and updates diet orders by following each step of designated procedure from the Admission, Discharge and Transfer (ADT) report, nourishment reference book, add-on sheet,, and other administrative procedures.
Other duties may be assigned or may be asked on work other units to ensure coverage.
Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights Minimum Qualifications : Three (3) years of experience in an occupational field related to the work assigned to the position, which must include 1 year experience utilizing food service software similar to CBORD, and one year experience working with medical and altered texture diets. Substitutions: Appropriate education will substitute for the required experience on a year-for-year basis. Employment history is calculated on a full-time basis (40/hrs per week). Part-time employment is calculated on a pro-rated basis to determine qualifications. Exposure to cleaning chemicals and commercial cooking equipment. Required to report without delay or interruption to provide essential or emergency services to ensure health, safety, and welfare Required to take TB (Tuberculosis)Test Former State employees who were disciplinarily terminated or resigned in lieu of termination must (1) disclose that information on the application (2) provide an explanation why the prior termination or resignation should not disqualify the applicant from the current position, (3) provide the employee number from the applicant's prior State employment. Absent extraordinary circumstances, prior disciplinary termination or resignation in lieu of termination and failure to provide this information will disqualify the applicant from future State employment with CDHS.
