This role focuses on building and driving a positive culinary culture, identifying, and developing key culinary team members, driving key performance metrics related to cost of goods and labor, driving food safety and sanitation practices, and ensuring exceptional food quality through recipe adherence to enhance the guest experience.
Requirements: 5+ years high-volume ($5+ million dollars annually) Kitchen Manager / Chef experience. Proven experience as an Executive Kitchen Manager or similar role in the restaurant industry. Strong leadership and managerial skills, with the ability to inspire and motivate a culinary team. Excellent culinary skills and knowledge to support the development of the culinary operations team. Proficiency in managing food cost, labor cost, and other key performance metrics. Solid understanding of food safety and sanitation regulations and best practices. Exceptional organizational and time management skills, with the ability to prioritize tasks effectively. Excellent communication and interpersonal skills, with the ability to collaborate effectively with all team members. Bachelor's degree in culinary arts, Hospitality Management, or related field preferred. Bilingual preferred. Travel between stores/locations locally. Duties Include: Provide strong leadership and communication skills to drive culinary operations and results. Manage shifts which include daily decision making, scheduling, and planning. Create memorable dining experiences by exceeding guest expectations. Cultivate and foster a positive culinary culture that aligns with Gastamo's Core Values. Act as a brand ambassador for Gastamo Group, always represent the company's values and standards. Lead and manage the culinary team, including hiring, training, coaching, and performance management. Execute systems to drive key performance metrics, including cost of goods and labor. Ensure compliance with food safety and sanitation standards, regulations, and procedures. Lead menu development, recipe standardization, and execution to maintain consistent food quality. Understand flavor profiles and quality of food ingredients. Collaborate with the operations team to optimize kitchen workflow. Manage inventory levels and food ordering to minimize waste and maintain cost control. Monitor and analyze kitchen performance data to identify opportunities for improvement. Uphold company standards for food presentation, portion control, and recipe consistency. Foster a culture of continuous improvement to culinary excellence. Complete daily, weekly, and monthly administrative duties set by Gastamo. Personal Skills:
