We are currently hiring for a Chef de Cuisine at Posana Restaurant in downtown Asheville. Posana is a contemporary American restaurant in the heart of downtown Asheville on historic Pack Square. Since our inception, the philosophy at Posana has been to offer a seasonal menu that draws inspiration from local ingredients. We are looking for an individual with at least one year of experience in a kitchen leadership role, and at least 3 years of experience in the food and beverage industry. Chef de Cuisine Qualities
a strong work ethic with a positive attitude a commitment to punctuality a sense of compassion and professionalism keen communication skills for a fast-paced environment a passion for food, cooking, and sustainability the knowledge and aptitude to work all stations the ability to effectively lead a culinary team Chef de Cuisine Job Duties: Leads kitchen team Provides guidance to kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating Oversees and organizes kitchen stock and ingredients Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance Keeps cooking stations stocked, especially before and during prime operation hours Assist with hiring and training new kitchen employees to restaurant and kitchen standards Manages food and product ordering by keeping detailed records and minimizes waste, plus works with existing systems to improve waste reduction and manage budgetary concerns Supervises all food preparation and presentation to ensure quality and restaurant standards Maintain kitchen organization, staff ability, and training opportunities Verifies that food storage units all meet standards and are consistently well-managed Menu creation Coordinates with restaurant management team on supply ordering, budget, and kitchen efficiency and staffing This position will receive full benefits (medical, dental, vision, short term disability, life insurance), as well as access to mental healthcare through the Employee Assistance network, staff meals for each shift, and PTO (accruing after six months of employment).
